Bengali Shukto (Vegetable Medley)

Bittersweet medley of vegetables with mustard oil.

Ingredients

  • Assorted vegetables (bitter gourd, raw banana, drumstick, potato)
  • 2 tbsp yellow mustard oil
  • ½ tsp panch phoron (optional)
  • ¼ tsp turmeric powder
  • 1 tsp sugar
  • 1 cup milk or water
  • Salt to taste

Steps

  1. Heat mustard oil, add panch phoron and let it crackle.
  2. Add vegetables, turmeric, and salt. Cook gently with milk or water until tender.
  3. Stir in sugar and serve warm
