Classic Aloo Paratha

Stuffed potato flatbreads crisped in groundnut oil.

Ingredients

  • 2 cups whole wheat flour
  • 3 medium potatoes, boiled & mashed
  • 2 green chilies, finely chopped
  • 1 tsp cumin seeds
  • 2 tbsp coriander leaves, chopped
  • 4 tbsp groundnut oil (for cooking)
  • Salt to taste

Steps

  1. Dough: Knead flour with water and 1 tsp oil into a soft dough. Rest 20 minutes.
  2. Filling: Mix mashed potatoes with chilies, cumin, coriander, and salt.
  3. Stuff & Roll: Divide dough into balls, stuff with filling, and roll into parathas.
  4. Cook: Heat tawa, drizzle with groundnut oil, cook until golden and crisp on both sides.
  5. Serve: With yogurt or pickle.
