Ingredients
2 ripe bananas, mashed
½ cup virgin coconut oil (melted)
½ cup brown sugar
2 eggs
1½ cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon powder
Pinch of salt
Steps
Preheat Oven:
180°C (350°F). Grease loaf tin with coconut oil.
Wet Mix:
Combine bananas, sugar, eggs, and coconut oil.
Dry Mix:
Whisk flour, baking soda, cinnamon, and salt.
Combine:
Fold dry mix into wet mix until just combined.
Bake:
Pour into tin, bake 40–45 minutes until skewer comes clean.
