Coconut Oil Banana Bread

Moist banana bread with coconut oil.

Ingredients

  • 2 ripe bananas, mashed
  • ½ cup virgin coconut oil (melted)
  • ½ cup brown sugar
  • 2 eggs
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon powder
  • Pinch of salt

Steps

  1. Preheat Oven: 180°C (350°F). Grease loaf tin with coconut oil.
  2. Wet Mix: Combine bananas, sugar, eggs, and coconut oil.
  3. Dry Mix: Whisk flour, baking soda, cinnamon, and salt.
  4. Combine: Fold dry mix into wet mix until just combined.
  5. Bake: Pour into tin, bake 40–45 minutes until skewer comes clean.
