Coconut & Quinoa Salad

Quinoa tossed with vegetables and coconut oil dressing.

Ingredients

  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • 1 carrot, julienned
  • ½ cup cherry tomatoes, halved
  • 2 tbsp virgin coconut oil
  • 1 tbsp lime juice
  • 1 tsp honey
  • Pinch of salt

Steps

  1. Prepare Base: Toss quinoa with cucumber, carrot, and tomatoes.
  2. Dressing: Whisk coconut oil, lime juice, honey, and salt until emulsified.
  3. Assemble: Pour dressing over salad and mix gently.
  4. Serve: Garnish with fresh coriander or mint leaves.
