Mustard-Spiced Potato Stir Fry

Crispy potatoes tossed in pungent mustard oil.

Ingredients

  • 500g potatoes, boiled and cubed
  • 3 tbsp mustard oil
  • 1 tsp mustard seeds
  • ½ tsp turmeric powder
  • 1–2 green chilies
  • Salt to taste

Steps

  1. Heat mustard oil, add mustard seeds and chilies until seeds crackle.
  2. Add potatoes, turmeric, and salt. Stir-fry until edges crisp and golden.
  3. Garnish with fresh coriander and serve hot.
