Rajasthani Gatte ki Sabzi

Gram flour dumplings in yogurt curry.

Ingredients

  • 1 cup besan (gram flour)
  • ½ tsp ajwain
  • ½ cup yogurt
  • 3 tbsp groundnut oil
  • 1 tsp turmeric, 1 tsp chili powder, 1 tsp coriander powder
  • Salt to taste

Steps

  1. Prepare Gatte: Make a stiff dough with besan, ajwain, 1 tbsp oil, and water. Roll into logs, boil until firm, cut into pieces.
  2. Gravy: Heat oil, add spices and whisked yogurt. Cook till aromatic.
  3. Combine: Add boiled gatte, simmer 10 minutes.
  4. Serve: With bajra roti or steamed rice.
