South Indian Peanut Chutney

Peanut-based chutney with groundnut oil tempering.

Ingredients

  • ½ cup roasted peanuts
  • 2 dried red chilies
  • 1 clove garlic
  • 2 tbsp groundnut oil
  • ½ tsp mustard seeds
  • 6–8 curry leaves
  • Salt to taste

Steps

  1. Grind: Blend peanuts, chilies, garlic, and salt with little water into chutney.
  2. Temper: Heat oil, splutter mustard seeds and curry leaves, pour over chutney.
  3. Serve: With dosa, idli, or hot rice.
